Harsh's Simple Barbecued Minty Chicken

Sorry for the long gap, This is one Recipe you will definitely love. It is a great one to try on a picnic or outing as it involves hardly and preparation time. Anyway, here it is :



Serves Four

Ingredients :
1) 1 Kg Skinless Chicken cut into 4 Inch Pieces.
2) 100 Grams Green Chillies (use more if you prefer).
3) One large bunch Fresh Coriander.
4) One small Bunch Fresh Mint .
5) Roughly crushed Black Pepper.
6) Salt to taste.
7) 50 Grams Ginger Garlic Paste.
8) Vegetable Oil 100 Ml.

Method :

First, wash the chicken thoroughly and Marinate it with the Ginger Garlic Paste, pepper and a little Salt. Use only a little salt at this stage or else the chicken will tend to turn out very dry.

Next, Grind all the fresh Ingredients to a fine paste along with the Oil. Add this paste to the marinated chicken along with some more salt and mix thoroughly. Check seasoning and correct if necessary.

You need to keep this aside (Covered) or in the Fridge for at least one Hour. If you are going on a trip or Picnic, you can transfer it into an air tight plastic box and carry it with you.

To cook, Grill it on a charcoal Barbecue / open fire till the edges of the chicken pieces start to turn Golden Brown to Black. Alternatively, you can Grill in an Oven pre heated to 200 Degrees for 15 - 20 Minutes. Another alternative is to Pan fry in Oil for approximately 8-10 Minutes on each side.
