Simple Chicken Biryani

Simple One Vessel Chicken Biryani - Bachelors' delight!

Being a bachelor sometimes gets highly monotonous! It's the food that starts boring you most of the time. The same food at work, the same mess in the evening, and, when a little variety is desired, it's back to the same old "Bar & Restaurant" round the corner from your place of dwelling.


The fact is, if you have a kitchen or a kitchenette, it need not be boring. You can cook up some delicious food, enjoy it and invite over some friends or colleagues to share it with. The advantage being, a little chit chat over food helps relieve the overwhelming monotony of a Bachelor's life!

Here's a Chicken Biryani recipe that's simple, quick and  easy.

Ingredients:

Chicken (cleaned & Washed) 500G
Yogurt (Curds) 200Ml
Onions Peeled & thinly sliced 500G
Green Chillies 4-5 (Slit)
Coriander
Mint (Pudina)
Ginger Garlic Paste
Rice (Basmati) 200G washed & soaked.
Salt

Peanut Oil (Any other refined oil will also do)

Spices:

Cinammon, Cloves, Cardamon, Star Anise, Coriander Powder, red Chilli Powder, Turmeric Powder, Garam masala powder.

Method:

1) Mix Yogurt, half of the Ginger Garlic Paste, & red chilli powder. Mix in the chicken and cover & keep aside.
2) In a Thick bottomed Pressure Cooker, Heat the oil & and fry half of the onions till browned. Remove from oil and keep aside.
3) Re - heat the oil throw in Cinammon, Cloves, Cardamon, Star Anise and stir for a30 seconds now add the remaining onions, fry till translucent and soft, now add remaining Ginger Garlic paste, slit green chillies and saute.
4) Add the marinated Chicken and mix well. add Coriander Powder, Turmeric Powder, Garam masala powder and stir fry for 5 Minutes.
5) Crush the fried onions and mix in 1/4 of them
6) throw in Coriander & mint (half)
7) add half the rice.
8) Add another 1/4 of the onions, mint & coriander.
9) Add remaining rice
10) add the remaining onions, mint & coriander.
11) Add twice the quantity of water to the rice. (add it slowly so as not to disturb the layers)
12) cover the cooker and add the whistle.
13) after the first Whistle, reduce heat and wait for two more whistles.
14) Turn off the heat and wait for pressure to come down.

Serve Hot with a salad made of sliced onions, mint & yogurt!
